Fresh Corn Salsa

You will LOVE this recipe. It is one of my all-time favorite summer time recipes. I make it with fresh corn from the corner stand. Delicious and Nutritious.

2 T. olive oil
1 T. freshly squeezed lime juice
1/4 cup fresh cilantro (chopped)
1/4 tsp. salt
1/4 tsp. fresh ground pepper
2 1/2 cups fresh cut corn kernels (cut straight from cobb, NOT cooked)
1-2 avacados (diced)
2 cups diced tomatoes
1/2 cup finely diced red onion

In a bowl, wisk olive oil, lime juice, cilantro, salt and pepper. Add rest of ingredients and toss to coat. Serve with tortilla chips or hot cheesy quesadillas.

THANK YOU TERESA!!! You are the only person in this world to get me to eat and enjoy corn (other than my mother-in-law's corn chowder and that doesn't really count as corn)! You are the greatest!!!
