Fresh Corn Salsa
You will LOVE this recipe. It is one of my all-time favorite summer time recipes. I make it with fresh corn from the corner stand. Delicious and Nutritious.
2 T. olive oil
1 T. freshly squeezed lime juice
1/4 cup fresh cilantro (chopped)
1/4 tsp. salt
1/4 tsp. fresh ground pepper
2 1/2 cups fresh cut corn kernels (cut straight from cobb, NOT cooked)
1-2 avacados (diced)
2 cups diced tomatoes
1/2 cup finely diced red onion
In a bowl, wisk olive oil, lime juice, cilantro, salt and pepper. Add rest of ingredients and toss to coat. Serve with tortilla chips or hot cheesy quesadillas.
